Woodward Canyon Columbia Valley Merlot 2007 Wine

This Merlot was pumped over and punched down by hand two times per day in small stainless steel tanks. After pressing, settling and racking various lots were moved to French barrels for aging and maturation. In spring of 2009 following final racking, wine was assembled and bottled and laid down in our cellars for additional development. wine shows extraordinary complexity yet is softer and more elegant than several more recent vintages. Blending of fruit from such fantastic vineyards has produced a complex flavor profile of generous cherry, oak, spice and coffee; I pick up notes of toasted coconut and vanilla in aroma. Rich fruit and fully mature tannins give this wine softness for drinking now yet with proportion and structure to age well for six years or more. The Wine Advocate rating: 90.

Since 1980 Rutherford Star vineyard in heart of Rutherford Bench appellation has been source of Forman Vineyard Chardonnay. In 1986 this vineyard was purchased and is now co-owned as a partnership. It has continued to produce consistent quality over last 20 years. Chardonnay is whole cluster pressed and exclusively fermented in Burgundy barrels. Left sur-lees for seven months wine is only racked once during its nine months of barrel aging. Malolactic fermentation is intentionally inhibited. wine emphasizes and develops a minerality which, with age, develops into a very racy and elegant food worthy wine. This wine is from United States, California region, Napa County sub-region and Napa Valley appellation. Arietta H Block Hudson Vineyards Napa Valley is a blend of Cabernet Franc and Merlot. The Cabernet Franc is solely from the 2.3 acre Hudson Vineyards H Block, a shy-bearing, volcanic, southwest facing slope, which naturally yields just three tons per acre. The Merlot is grown in the Hudson Vineyards N Block, about 100 yards away. Typically, the two fields are picked simultaneously and co-fermented, assuring a marriage of the varieties. The Cabernet Franc provides the cassis, blueberry, brown sugar character, while the Merlot brings dark chocolate to the aroma and a chewy richness to the finish. Harvested near the extreme of ripeness, the wine is fermented with its indigenous yeast, macerated with the skins for six weeks, and then aged for two years in all new French oak barrels. Naturally clarified by traditional Bordeaux racking, the blend is bottled without fining or filtration. Complex mix of ripe mountain bramble, cassis, and currant fruits; dark chocolate, toasty oak, licorice, exotic spice. Full-bodied, with elegant chalky tannins, sensuous balance, integrated oak. Summer was unusually warm; picking began on September 18, ahead of schedule. Though a cool October slowed ripening, all parcels were harvested within five weeks, and natural yeasts started primary within three days. Those first fermentations alerted us to how rapidly color and tannin were being extracted. We reduced pump-overs, and pressed at day ten. This wine is from Italy, Veneto region, Valpolicella Classico sub-region. Tasting NotesAmarone is a full-bodied wine for red meats, game, and tasty and piquant cheeses, like parmesan. Generally considered a wine for meditation, it is a great after-dinner wine.Winemakers NotesAmarone is the product of the ancient wine-making method called 'appassimento' (drying of the grapes). At the end of September or the beginnning of October, the best clusters of grapes from the hillside vineyards are picked and placed in wooden boxes or on bamboo racks. The grapes are left to dry for 36 to 48 hours in rooms with controlled atmospheres (controlled humidity and forced ventilation) and then in large rooms in the old farmhouses in the hills until about the middle of January. There are large openings or windows to allow the free flow of air which is vital to the drying of the grapes.By January the grapes weigh 35-40% less and have a naturally enhanced flavour and a higher concentration of sugar. Just the Corvina is attacked by botrytis ('noble rot'). After a delicate pressing and partial destalking of the grapes, they ferment for about 50 days in large Slavonian oak barrels at low, natural temperatures (natural cold fermentation). The wine is racked off its lees, and transferred into barrels of 30-40 hl where the alcoholic fermentation continues for a further 3-4 months, encouraged by selected 'Saccaromices Bayanus' yeasts. In the meantime malolactic fermentation also takes place.Once the wine is completely dry, it is again rached off its lees and then continues its aging for another 20 to 30 months, partly in large oak barrels and partly in small Allier and Slavonian oak barrels of 600 litres (maximum 3 years old). The wine is then filtered, bottled and aged in bottle for an additional 6 months or more before release.HistoryAmarone and its sweet counterpart, Recioto, have been produced in Valpolicella since Roman times. Virgil, Suetonius, Martial and Pliny the Elder testify to their existence. The original name for these wines was 'reticum', later changed to 'acinaticum' by Cassiodorous, minister of King Theodoric. We continue to find historic references during the successive centuries: during the Longobard period, the Middle Ages, the dominion of the Scaligers, as well as during the Most Serene Republic of Venice when this wine was referred to, with great pride, as a 'wine of the Doges'. The term 'recioto' probably comes from the dialect word 'recia' which means the upper and outer parts of the bunches of grapes. These 'recie' are the grapes which are ripest and which enjoy the best exposure to the sun. A second hypothesis derives the term 'recioto' from the Latin word 'racemus' which means bunch. A third hypothesis derives the term from 'recisus' which means 'cut and dried'. The existence of a dry Recioto wine is attested from antiquity, even if the term 'Amarone' did not make its appearance until the 18th century. We fermented grapes using only yeasts that naturally occur on grapes and allowed wine to gain flavors and color from extended skin contact. Each lot is aged separately for several months, and then blended to create a wine that is more complex than its individual parts. After blending, wine spent another year and half in barrel to completely harmonize before bottling. Elegant and full bodied, wine's complex aromas of black berries, black licorice and a hint of cocoa powder are perfect partner with grilled steak, roasted rack of lamb or venison stew.

Grapes were harvested the first week of April, de-stemmed, chilled and lightly pressed. The juice was racked to 70% new and 30% one-year-old French oak barriques and underwent fermentation using native yeasts. Following malolactic fermentation, the wine was put back onto its lees to rest, with regular stirring, for a further 4 A months. After a total of 8 months in barrique, the wine was racked to clarity and bottled without filtration in January 2006

utterly distinctive Chianti Classico from Agricola Querciabella is made from grapes that are carefully selected in vineyards and harvested in 8-kilo crates. They are destemmed, not crushed, after which they are conveyed into temperature-controlled stainless steel vats, where alcoholic fermentation and maceration take place. Macerations last about 12 days for Sangiovese and up to 20 days for other varietal. After completing a full malolactic fermentation wine is transferred into barriques. oak is 100 percent French, and comes from Allier, Chatillon, Nevers, and Tronçais. It is 30 percent new and 70 percent one year old or two year old for Sangiovese. This wine is from France, Burgundy region, Cote De Beaune sub-region and Corton appellation. In 2006, Pascal Marchand, who had forged an international reputation as a brilliant winemaker over more than two decades, launched a new Burgundian micro-negociant business under his own name. A native of Montreal and an adventurer at heart, Pascal began his career in wine working the harvest at Chateau de Chorey-les-Beaune in Burgundy in 1983. He returned the following year and quickly established himself as one of the region's rising stars after being hired by the Domaine du Comte Armand in Pommard. Little known before then, the Domaine and its Premier Cru monopole vineyard Clos des Epeneaux quickly gained renown and Pascal's wines became recognized by prominent journalists and aficionados as reference points for Pinot Noir's modern style. After 15 years at Comte Armand, he took on a new challenge in 1999, working with the Boisset family to launch their showcase estate, the Domaine de la Vougeraie - one of the most ambitious projects the region had seen since World War II. The association with the Boissets also led Pascal to further expand his horizons, consulting on their projects in Beaujolais, Minervois, California, Canada and South America. Since leaving the Boisset group in 2006, Pascal has established himself independently as a winemaker and consultant - in Burgundy at Domaine Jean Fery et Fils; in Sonoma, California at Joseph Phelps' Freestone Winery; in Niagra, Canada at Tawse Winery; in Australia at Carlei in South Yarra and Heathcote, Prancing Horse in Mornington Peninsula, Turner's Crossing in Bendigo, and with his own brand Marchand & Burch, which he founded with his friend Jeff Burch in Western Australia. Finally, he continues to work with VC Family Estate in Chile and Argentina, whose collection of brands includes Veranda, a brand Pascal had launched with Boisset in 2002. Today, Pascal's personal passion and commitment to working with Burgundy's most distinctive terroirs is realized through his new negociant business, which has grown to encompass 36 appellations of the Cotes de Nuits and a few, mainly for white wines, from the Cotes de Beaune. The production, which has reached 6,000 cases, is now being marketed under a new label: Marchand & Tawse, since Pascal formed a partnership with long-time friend and business associate Moray Tawse. The fruit for these wines is sourced from growers Pascal knows and trusts, and vineyards with a minimum of 35 years of age. All are perfectly maintained. Many are farmed organically, which is not surprising since Pascal has been a leader in the use of organic and biodynamic methods through the years. All of his operations are carried out according to the lunar calendar. The wines are vinified and matured in cellars in the heart of Nuits-St.-Georges, using barrels selected from two specialized artisanal coopers. The wood is selected from the best plots in the forests of Alliers, Cher, Compeigne, Fontainbleau, Jupille and Oise. The staves are seasoned for 4-5 years and the barrels are toasted very lightly and slowly. The wines speak directly of their origins and of the sensitivity Pascal has cultivated throughout his remarkable career.. Sourced from 40 year old vines in Le Rognet and Corton that face east and are planted mid-slope. Vineyard soils are primarily loam, mixed with ferruginous colite and limestone. The fruit was destemmed, briefly cold macerated and punched down twice/day during alcoholic fermentation. After fermentation, the wine received additional maceration, for a total of 25 days. Palate: Full-bodied with a rich mouth feel and silky smooth flavors of boysenberry, blackberry, blueberry, black pepper, spicy earth, cassis and cocoa.
