The Brut Premier Cru Cuvee Rubis is 90% Pinot Noir (including 15% still Pinot) and 10% Chardonnay (equal parts 2006 and 2005 vintages), aged in medium-sized barrels. Disgorged: December, 2008. Anticipated maturity: 2009-2016. Proprietor Laurent Champs makes some of the most elegant, refined wines in Champagne. All of the wines are aged in oak ranging from large, neutral casks to small barriques, some of which are new for the top selections. Few producers have been able to find such impeccable balance using oak. As roses go, this is an understated effort with solid if not truly excellent depth and I very much like the precise mouth feel. Do not, I mean DO NOT by any means allow your neighbors suck up this bottle when you invite them over for dinner. This wine should be savored and most of all appreciated. Be sure to hide that bottle good...in the closet, bathtub, litterbox...you know.Either way, I wont have to go into the details of how highly rated this wine is by experts like Tazner or Parker, since wine ratings really dont make or break a wine. We have certainly found plenty of wines that had sub-par wine ratings by these acclaimed critics but our tastebuds actually disagree. This full ruby red is suave with aromas of rich cherry and chocolate and undernotes of leather, cedar and oak. This ripe wine has flavor through the entire finish. Unlike *cough* those juice-box guys, Colpetrone is one of the leading properties in the region!(For those of you that are curious about the ratings of this wine continue reading.....) Wine Advocate Robert Parker 90 Points! The 2005 Sagrantino di Montefalco is representative of this quirky Umbrian variety. Artisan Aged Manchego Wheel from Spain
USD 122.00 Villajos Reserva is an authentic handmade, raw sheep's milk cheese cured for over one year. This aged "curado" Manchego has a full rich flavor with a healthy sharpness. Slice and serve with olives and sliced jamon for the authentic flavor of Spain. Packed in a rustic wooden box, it makes a superb gift! Their tiny artisan family operation is too small for the Villajos brothers to supply the commercial market. The cheese is "homemade" -- made in tiny quantities by two brothers in their creamery from milk supplied by local shepherds. The cheese is made with raw milk from the Manchega breed of sheep, which are tended by shepherds in the hills surrounding the village. The family collects the fresh milk from the ewes in milking pails and immediately refrigerate it in order preserve its natural aroma and taste. This extra effort is amply rewarded. In recent years the wines have gained in richness and complexity. The oak that dominated the wines' balance in the past has been cut back.
