Splits are beans that have split on the vine or during the curing process. Many commercial vanilla extract manufacturers prefer splits because often they have a higher vanillin content. This lot typically has 0.23 grams of vanillin per 100 ML vs the usual 0.18 grams per 100 ML for high quality extract grade beans. These beans have a higher moisture content than typcial extract grade beans - roughly 30% vs 20%. If these beans weren't split, we could call them gourmet grade. This auction is for the following type of vanilla bean: Species Grade Country of Origin x Planifolia (Madagascar Bourbon) Prime Gourmet Grade A India Tahitian (Tahitensis) x Mid Grade Indonesia Extract Grade B x Madagascar Mexico Storing Vanilla Beans Tahitian beans also contain heliotropin, an organic compound that imparts a sweet, floral, fruity flavor. For Madagascar and Tahitian vanilla beans, there are two grades that are most commonly available to the consumer. The better grades are sometimes referred to as Gourmet, Prime, or Grade A.
