Originally named for the vintner's daughter, we meet people all across the country who have become engaged over a bottle of Wedding Cuvee, enjoyed it at engagements parties, rehearsal dinners, to calm pre-nuptial jitters, on honeymoons, anniversaries and in the delivery room, Valentine's Day, Mother's Day and many other special occasions. Each year, we make a limited number of exquisite etched jeroboams (the equivalent of four regular bottles) of Wedding Cuvee, which are only available at the winery. .

This is Iron Horse's Blanc de Noirs, made from predominantly Pinot Noir. It has a beautiful, pale-peach hue. Rich and creamy, like pure strawberries and cream, this is without doubt most romantic of our Sparklings. It is dangerously easy to drink. A favorite for many, Iron Horse is probably best known for this cuvee. Marries perfectly with frisee salad with diced bacon and a Pinot Noir vinaigrette, Chinese chicken salad, scrambled eggs and caviar, rock shrimp and potato frittata, mushroom dishes such as a grilled Portobello sandwich or wild mushroom risotto, poached salmon - hot or cold, and best of all, chocolate dipped strawberries. Russian Cuvee commemorates style of Sparkling that Iron Horse made for historic Reagan-Gorbachev Summit Meetings, which ended Cold War. It is sweetest of their cuvees - right on edge of Brut level dry and hits a perfect balance point. higher dosage doesn't come across as sweet, per se, but makes wine richer and more floral. Russian Cuvee was originally designed as a toasting wine. It is exceptional with foie gras (for same reason Sauterne goes with foie gras) as well as sweet and sour tastes of many Asian dishes. It is surprising with vine-ripened tomatoes and when October rolls around, a fabulous cocktail is Russian Cuvee with a handful of pomegranate seeds bobbing in glass. For dessert, almond cake with strawberries and whipped cream, or anything to do with ginger.

Wedding CuvACe is our interpretation of a Blanc de Noirs. In blending this wine we choose Pinot Noir lots that are extremely expressive and fruit forward (including som lots originally intended for our Brut RosAC). Then in a decided step away from convention, we blend in a bit of steely Chardonnay to add a firm acid backbone. Hand harvested in the chill of early morning our Pinot Noir is gently pressed as whole clusters. The juice slowly ferments in stainless steel tanks at 62A to 65A f retaining bright fruit aromas and flavors in the wine. The dosage for the 2007 Wedding is 4ml Blanc de Blancs LEX.

It was a style that Warren refers to as “an iron fist in a velvet glove.' As luck would have it, an adjoining prune orchard was for sale. The Winiarski's purchased the land and planted a vineyard-now known as S.L.V. - and soon after, Stag's Leap Wine Cellars was born.. 2007: 90 Points - Robert Parker, Wine Advocate: "The 2007 Cabernet Sauvignon Fay Vineyard Estate is an outstanding effort made from 100% Cabernet Sauvignon from a 67-acre estate vineyard in Stags Leap. Its deep ruby/plum color is followed by sweet aromas of plums, Allspice, licorice, black currants, cherries and flowers.
