Japanese Sencha is grown in the Zhejiang Province located in the West Lake Region of China. As the leading producer of tea, Zhejiang is well-known for producing teas such as Gunpowder, Mei Longjing, and green leaf-scented Jasmine. The base for all of these teas is a China Green "Sencha-style" leaf. You will note that this Japanese-style Sencha is tightly rolled into needle-shaped leaves. This traditional Japanese green tea is decaffeinated using a C02 process that does not detract from the tea's health benefits, the perfect balance of sweetness and astringency, and a clean finish. Like most Japanese tea, the flavor is reminiscent of seaweed, or a grassy flavor because of its vegetal notes. This loose-leaf tea should steep at 170 degrees for 1-2 minutes using 1 teaspoon of tea for every 6oz of water. From there, you may adjust the amounts of Japanese Sencha tea according to your taste.

Togarashi (Japan) referring to the Japanese word for "chiles," is a group of table additions, always including chiles, that bring out the clean and simple flavors of Japanese food. It is one of the most popular seasonings in Japan. Red chilies were introduced into Japan in the 16th century, originally as a medicine, and this seasoning blend likely followed soon afterward. Yagenbori Nakajima Shoten, an apothecary established in 1625 in old Edo (now Tokyo), claims to have introduced the Togarashi blend. The shop, now one of Japan's most revered spice stores, still exists in the Asakusa district. Chile peppers contain capsaicin, a chemical that induces warmth, so you can stick it in your shoe or mitten to keep toes and fingers warm. It is apparently also useful for keeping rice from becoming bug-infested. Capsaicin has also been tested on rats for things like pain relief, cancer cell reduction, diabetes prevention, and weight loss. Togarashi is used to add both heat and flavor to dishes such as soba noodles, udon, beef tataki, jasmine rice. It works well with fatty foods such as unagi (broiled eel), tempuras, shabu shabu (small bits of food cooked in rich broth), noodle dishes, and yakitori (grilled dishes). Our personal favorite is mixing togarashi with sesame oil and tamari as a marinade for salmon, and especially beef tenderloin.

Once grown wild along the rocky shores of Japan, but for the past 300 years, to meet the ever growing demand for this delicious and nutritious nori, it has been cultivated. Its crispy yet soft texture, mild flavor and mouth watering aroma have made it one of the most popular varieties of nori in Japan today. It is considered to be premium quality and is often found in gourmet food shops. Eden's nori is cultivated off the west shore of Ise (ee-say) Bay in Japan, an area surrounded by National forests and mountains, known as the 'Ocean by Mountains'. Pristine mountain rivers nourish the bay creating a mineral rich environment. This area leads all of Japan in ecology movements. Development is forbidden to ensure future generations the legacy of this famous edible seaweed resource. Nori cultivation is an intricate craft in that spore quality, water temperature, a pristine growing environment and proper drying methods are crucial to producing the best quality product. Eden's nori is cultivated in the traditional manner, using a system of woven rope nets that are tied to bamboo poles and horizontally suspended in the bay. This intricate substratum is placed in the shallow bay in late September or early October. Over the autumn, winter and early spring months, with the coming in and out of the tide, and the cooling of the water temperature, the nori spores attach to the netting and slowly develop into nori fronds or leaves. In spring the fully developed fronds are harvested at low tide by scraping the nori from the netting and taking it ashore. The nori is washed with pure water, and spread on wood frame drying screens where it is dried by hot air into thick, cake-like layers. After drying for several hours the cakes of nori are broken into smaller pieces or flakes.
